MUSSELS in WHITE WINE n BLACK BEAN SAUCE ©





 For this preparation, we are going to do a quick stir-fry of mussels in white wine and black bean sauce. Such cooking style is South-East Asian.




Ingredients and Preparation for 4


Prepare chopped ginger, garlic, onions, chilli (red or green), parsley.
Prepare 1.5 lbs washed and cleaned mussels. Preferably, remove mussels from shells for this style of cooking.

Cooking Steps

Saute chopped ingredients in 4 tbs cooking oil for two minutes under medium heat. 

Add 3 tbs black bean sauce, 1/2 cup white cooking wine, 1/2 teaspoon black pepper, 1/2 teaspoon white pepper, 1 tbs vinegar, 1 tbs sugar and saute for 3 minutes on medium heat. 
Add shelless mussels to the sauted ingredients and cover with top, to steam, for 3 minutes under high heat.
Mussels nicely cooked. Avoid cooking mussels for more than 5 minutes on high heat, as overcooked mussels is rubbery.
Ready to serve, garnish with parsley/cilantro.
