CLAM with BEAN SPROUTS in WHITE WINE n SWEET SOYA SAUCE ©




I find this dish delectable, yet, common, as bean sprouts are staple in South-east Asian cuisine. What makes this dish different is the combination of seafood with vegetable - clam with bean sprouts.


I first had this dish in the hawker stall at the old Palm Road venue that sells Fried Clam Noodles. We loved having clams and specially requested the stall operator to cook our special order in a style we liked - Clam with Bean sprouts without the noodles. The sweetness of the soya sauce and the spice from chilli and pepper brings out the zesty succulent taste and aroma of the fresh clam.


Ingredients and Preparation for 4


Prepare chopped garlic, ginger, onions, chilli (green or red), and green onions.

Prepare 0.5 lb frozen clam meat.











Prepare bean sprouts.














Cooking Steps

Begin, by saute garlic, ginger, onions, chilli in 5 tbs cooking oil in a large skillet in medium heat until fragrant.









For flavor, add:- 2 tbs sweet soya sauce, 1 tbs chicken stock brand, 1 tbs fish sauce, 1/2 tsp pepper.










 Add clam meat and stir-fry with seasonings.











Add bean sprouts and combine well with clam meat and seasonings. Add 2 tbs white wine. Add green onions.









Ready for serving.
