Assam Fish is a common cuisine in the Malaysian culture. It is a Malay cuisine and has gained popularity among all cultures in Malaysia.


Ingredients and Preparation for 4

In this preparation, I am using frozen freshwater fish - Basa Fish.
Prepare fish by slicing into 1/2 inch thickness.
Prepare slices of ginger, lemon grass, chilli, tomato - halves.
To prepare assam paste :- Blend 5 shallots, 1 lemon grass stalk, few pieces of galangal, 1 tbs sugar, 5 pcs chillies, 1/2 tbs salt, 5 garlic gloves, tamarind, few slices ginger, 1 tbs tumeric powder, 1 tbs citric acid, 2 tbs curry powder, kaffir lime leaves.

Cooking Steps 

Boil 8 cups of water in a pot. When water is boiling, add ginger, lemon grass, tomato, chilli, and assam paste. Cook for 15 minutes over low heat. Add fish. Cover with top, and simmer for 10 minutes over low heat. Taste to flavor by adding 2 tbs fish sauce, some pepper, 1 tbs chicken stock brand.
When ready to serve, garnish with parsley or cilantro.
